Country Meatloaf: Family Circle magazine is where we found this great, basic meatloaf. For a sandwich, or with mashed potatoes, it’s always a favorite. $7.25 per pound (figure 1/2 pound per person)

Mexican Torta: Another of our vegetarian favorites, layers of tortillas, packed with pepperjack, black beans, roma tomatoes, corn and salsa, baked in layers like lasagna. $45 per pie
